Serve with rice and choice of garnishes!


2 lbs stew meat

1 lg yellow onion

3 cloves of garlic

1 c tomato paste

2 c beef stock

1 tsp orange zest

½ c orange juice

1 tbsp olive oil


Cilantro jalapeno, pickled onions.

Spice mix

¼ c kosher salt

1 tsp pepper

1 tsp turmeric

1 tbsp garam masala

1 tsp brown

½ tsp cumin

½ tsp coriander

½ tsp cayenne

½ tsp smoked paprika


Sear the meat on a high heat in a high sided pan with ½ tbsp olive oil, set aside.

With the same pan, turn heat to medium, add the remaining oil and saute the onions, add spices and tomato to make paste.

Add all remaining ingredients (garlic, beef stock, orange zest, orange juice, brown sugar) as well as the meat back into the pan.

Bring to boil then turn down to a gentle simmer. Cover.

Cook for 1 ½ hours. Continuously check and stir throughout to ensure enough liquid remains. If it appears low, add in more beef stock or water (½ cup at a time)

Serve with rice and choice of garnishes!
