Great for making tacos or burritos with a side of Calabacitas (squash, zucchini, shallots, jalapenos, roma tomatoes, corn – all sauteed together)
2.5 lb steak
⅓ c olive oil
3 each limes, juiced
1 each orange, juiced
½ c fresh cilantro, chopped
1 tsp ground cumin
1 tsp chili powder
salt and pepper to taste
Use skirt, flank or “carne asada,” as we often sell it as at XIT1885.
Marinade, fully submerged, in a glass container with all ingredients for 2-4 hours. The longer the better!
Sear on a pan or on the grill on a hot/high flame. Cook to medium rare
at 135 F, medium at 145 F, well done at 160 F.
Let it rest for 5-10 minutes. Slice against the grain. Serve as desired.
